Welcome to another week of Delicious Dish Tuesday... This week I am sharing my Mexican Chicken Lasagna with you...This was a hit with my family... I hope you enjoy it as much as we did... What you need:
2 lbs Chicken Breast
1 box Lasagna Noodles
1 large container of Cottage Cheese
2 eggs
2 cups shredded Mexican cheese
1 packet Taco Seasoning
Directions:
Preheat oven to 350 degrees and grease a 9x15 baking dish.
Cook noodles according to package. I usually use 9-12 noodles.
Cut chicken into small pieces and cook until no longer pink.
Once chicken is cooked and taco seasoning as directed on package.
In a medium bowl mix cottage cheese, eggs and 1 cup shredded Mexican cheese together.
Drain and rinse noodles. Layer noodles, cheese mixture and meat. Once together put remaining meat and sauce mixture on top then top with remaining 1 cup cheese and bake for 1 hour.
Mmmm... I think I am going to have to try this!

ReplyDeletethis looks like a variation of my mexican lasagna, though mine is vegetarian and made with taco sauce not seasoning, beans instead of chicken.
