Welcome to the first week of Crock pot Thursday by Andersons Angels, and Staying Me. This is a blog hop for and about delicious Crock Pot Recipes! Chicken Fajitas
What You Will Need:
1 pound boneless skinless chicken breast halves
1 can kidney beans, rinsed and drained
1 Large tomatoe diced
1 medium mild green chile diced
1 each medium green, sweet red and yellow peppers, julienned
1 medium onion, halved and sliced
2 teaspoons ground cumin
2 teaspoons chili powder
1 garlic clove, minced
1/4 teaspoon salt
6 8-in flour tortillas, warmed
Toppings are all OPTIONAL:
Shredded Lettuce and chopped tomatoes
sour cream
guacamole
Cheese
What To Do:
In a 3-qt crock pot, combine the chicken, beans, tomatoes, chiles, peppers, onion and seasonings. Cover and cook on low for 5-6 hours or until chicken is tender.
Remove chicken; cool slightly. Shred chicken and return to the slow cooker; heat through.
Spoon about 3/4 cup chicken mixture down the center of each tortilla. Top with your favorites and enjoy.

Yum! I am excited to see your pictures. I make chicken fajitas all the time but I had never thought if doing it in the crockpot before.
