Crockpot Thursdays: Greek Garlic Chicken

My recipe this week is a very yummy one that my family LOVED and enjoyed very much! I am hoping that you will enjoy it as much as we did...

Greek Garlic Chicken



What you need:
1/2 cup chopped onion
1 tablespoon plus 1 teaspoon olive oil, divided
3 tablespoons minced garlic
2 1/2 cups chicken broth, divided
1/4 cup pitted Greek olives, chopped ( I left mine whole)
3 tablespoons chopped sun-dried tomatoes (not packed in oil)
1 tablespoon quick-cooking tapioca
2 teaspoons grated lemon peel
1 teaspoon dried oregano
6 boneless skinless chicken breast halves (6oz each)
1 3/4 cups uncooked couscous
1/2 cup crumbles feta cheese

What To Do:
 In a small skillet saute the onion in 1 tablespoon oil until crisp-tender. Add garlic and cook for 1 minute. Transfer to crock pot.

Stir in 3/4 cups chicken broth, olives, tomatoes, tapioca, lemon peel, and oregano. Add chicken. Cover and cook on low for 3 1/2 to 4 hours or until chicken is tender.

In a large saucepan, bring remaining oil and broth to a boil. Stir in couscous. Cover and remove from heat; let stand 5 minutes or until broth is absorbed. Serve with chicken; sprinkle with feta cheese. ENJOY!!

  2. I love my crock pot and think this hop is such a great idea. I bet I can get some awesome recipes. Thanks for sharing this one. It looks delicious. My husband would love it!

  3. Mmmm! This looks so yummy! And it really doesn't sound that hard to do! I think I am going to have to try these crock pot meals and MAYBE try cooking once in a while! :)
