Meatless Monday Meal: Baked Pasta with Spinach


With trying to feed my family more healthy options I was asked to created a Meatless Meal. I came up with several different ideas and was very pleased with how my meal turned out for my family. I loved that no one knew it was meatless unless they were told. I made a delicious baked pasta with spinach. Everything in my meal can be purchased at any BJ's Wholesale Club.


What You Need:
4 Garden Vegetable Patties
1 Container of Cottage Cheese
1 Jar of Pasta Sauce
1 Box Pasta
Baby Spinach
2 Eggs
Mozzarella Cheese

What You Do:
Preheat your oven to 350* F. 
Cook and ground up your veggie patties; once they are all cooked and ground up add your pasta sauce and leave on warm stirring occasionally. While cooking the meat cook your pasta according to the directions on the box. Once the pasta is done drain the pasta. While the pasta and meat are cooking combine your cottage cheese, eggs and 1/2 cup mozzarella cheese in a medium bowl. 


Place a small amount of pasta sauce at the bottom of the dish and then a layer of your pasta. 


Then place a layer of your cheese mixture on top of the pasta.


Then you place a layer of spinach on top of the cheese mixture.


Then you place some of your meat mixture on top of spinach. Then continue the layer until your dish is full once  your layers are done top with some mozzarella cheese. Bake for 30 minutes.


ENJOY!!

  1. This looks really good. I love that it can be meatless! I would probably use ground turkey in it though! Thank you - this looks really good, and I love that it has spinach in it!

  3. I've been vegetarian for about 5 years now, and I LOVE how it forces me to get more creative. And,you're right - often people don't even realize they're eating vegetarian food. :)

  4. This dad doesn't cook a lot but learning now that I have all my kids living with me. I think I may be able to handle this and sounds great too

  5. This sounds really good, we have several meatless nights a week anyway and right now are not eating meat on Fridays. I have been searching for meals my family will eat, this one sounds like a winner.
