Since discovering that Mr. Anderson has a gluten allergy finding good tasting food that meets his approval has been very hard. I have learned how to make gluten free stuff from scratch but lets face with four kids and another on the way I don't always have time to be in the kitchen whipping everything up from scratch.

The girls and I made the banana muffins first and we decided we wanted to spruce them up a bit by adding fresh banana and chocolate chips to them. We also made our Simple Mills Chocolate Muffin & Cake Mix, 10.4 Ounce into triple chocolate muffins by adding chocolate chips and white chocolate chips to the mix. Yes my family loves chocolate. Personally I would have loved to add walnuts to the banana muffins but i'm the only one who would have ate them.

The banana muffins passed the taste test of Angel and I. They were delicious and I have to be truthful and I was worried that they would taste gritty and they did not! They were very moist and delightful. The chocolate muffins were some of the best I have ever had. There was no way to tell they were gluten free! I know that is one thing Mr. Anderson dislikes about most gluten free stuff is that it has a gritty texture to it. These baking mixes come out very moist with no gritty texture to them.

  1. They sound delicious! The boys have ADHD, which can be aggravated by gluten, so I try to be as gluten free as possible. I'm eager to try these!
